Fermentation – an energy-releasing process that does not require oxygen
TWO TYPES
1. Alcoholic fermentation – occurs when yeast and other one-celled organisms break down sugars – the process creates alcohol, CO2, and a little energy (bread, wine, beer)
2. Lactic acid fermentation – takes place in your body, occurs when your body needs more O2 than can be supplied (running fast for a long time), creates lactic acid, makes muscles sore
